

Light and Bright Lemon Mayo

Say goodbye to store bought mayo and say hello to your new secret sauce! This takes only a few minutes to throw together, and is magical slathered on sandwiches, fries, fish and beyond!

What you'll need
- 1 large lemon, juiced (or 2 tbsp lemon juice)
- 1 tsp Charred Lemon Sea Salt
- 1 whole egg, room temperature
- 1 cup avocado oil (or other neutral oil)
- 2 Tsp Dijon mustard
Preparation
- Add all of the ingredients into a wide mouth mason jar
- Place the blades of your immersion blender* on the bottom of the jar over the egg, and pulse 10-12 times to begin the emulsification process.
- Next, hold the power on while moving your blender up and down in the jar until the mixture is completely combined in a beautiful, thick mayonnaise.
*note, if you prefer to use a blender, follow these easy steps: add all the ingredients except the oil to your blender, and turn the blender on medium-low. Very slowly drizzle the oil in, and it will emulsify (the key is going slow, so take a few minutes to add the oil).
