This zesty, herbalicious salad is the perfect side to pair up with any meat or veg-based main — but you can also eat it and enjoy it all its own, too. It's like flavour-packed party with every bite.

What you'll need

  • 2 cups cooked orzo pasta
  • 4 tbsp olive oil
  • 2 tbsp freshly sqeezed lemon juice
  • 2 tbsp mayonnaise
  • 1 tsp A Spinkle of Sunshine
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 red/orange/yellow bell pepper
  • 1/2 red onion, minced
  • 1/2 cup crumbled feta
  • 1/4 cup black olives, sliced
  • 6 spears of asparagus, steamed & chopped into 1" pieces
  • Handful of fresh herbs, your choice!

Preparation

1. In a lidded jar, add oil, lemon juice, mayonnaise, A Sprinkle of Sunshine, salt & pepper.
2. Add all ingredients to a bowl and toss with dressing
