Golden Lemon Roasted Potatoes

These Greek inspired lemony, crispy potatoes make a wonderful side for pretty much anything. Pro-tip: sprinkle some feta on them when they come out of the oven.

What you'll need

  • 6-8 russet potatoes, peeled and wedges
  • Juice of one lemon
  • 1/4 to 1/3 cup olive oil
  • 2 Tbsp Golden Lemon Turmeric

Optional:
  • Feta cheese

Preparation

  1. Place your baking pan (must be sufficient size to hold all of the potatoes in a single layer) in the oven. Preheat oven to 400°F.
  2. Place potato wedges and lemon juice in a bowl and mix until the lemon juice is absorbed.
  3. Add Golden Lemon Turmeric and olive oil and mix until everything is evenly coated.
  4. Carefully remove the heated pan from oven and create a single layer of the potatoes.
  5. Return tray to oven and roast until golden brown or 35 minutes, flipping the potatoes every 10-15 minutes.
