Creamy Porcini Umami Soup

This umami flavor bomb is all you need to transform a basic mushroom soup into a creamy, dreamy delight.

What you'll need
- 1 tbsp olive oil
- 1 onion, diced
- ¼ cup white wine
- 3 cups sliced crimini mushrooms
- 2 cups broth ( Mushroom, vegetable or chicken)
- ½ cup cream ( dairy substitute like macadamia nut or soy milk)
- 2 tbsp Porcini Umami
Preparation
- Heat olive oil in a pot. Sauté onion, mushrooms and Porcini Umami blend until golden and softened.
- Add white wine until reduced down.
- Add broth and simmer for 10 minutes. Blend until smooth with a hand mixer, then stir in milk or dairy substitute.
