Creamy Porcini Umami Soup

This umami flavor bomb is all you need to transform a basic mushroom soup into a creamy, dreamy delight.

What you'll need

  • 1 tbsp olive oil
  • 1 onion, diced
  • ¼ cup white wine
  • 3 cups sliced crimini mushrooms
  • 2 cups broth ( Mushroom, vegetable or chicken)
  • ½ cup cream ( dairy substitute like macadamia nut or soy milk) 
  • 2 tbsp Porcini Umami 

Preparation

  1. Heat olive oil in a pot. Sauté onion, mushrooms and Porcini Umami blend until golden and softened.
  2. Add white wine until reduced down.
  3. Add broth and simmer for 10 minutes. Blend until smooth with a hand mixer, then stir in milk or dairy substitute.
