Charred Lemon Broccolini Salad

Broccolini is a great base for a salad: it has a delightfully crunchy texture but in terms of flavour, its subtle sweetness makes it a standout. We love how our Charred Lemon Sea Salt brings out the best in this green salad. Serve with coarsely chopped almonds and chunks of cheese for more flavour and texture than you thought possible!

What you'll need

  • 3 tablespoons extra-virgin olive oil
  • 1/2 cup whole almonds, coarsely chopped
  • 2 teaspoons Charred Lemon Sea Salt
  • 2 pounds broccolini, rinsed, stalks cut into 2- to 3-inch lengths
  • 8 ounces of fresh mozzarella or burrata 
  • 1/3 cup water
  • 1 to 2 teaspoons red wine vinegar

Preparation

  1. Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add almonds. Stir until lightly browned, 2 to 3 minutes. Sprinkle with Charred Lemon Sea Salt and sauté 1 minute. Transfer to small bowl.

  2. Add remaining 2 tablespoons of oil to skillet. Add broccolini and 1/3 cup water. Cover and boil until crisp-tender and still bright green, about 4 minutes. 

  3. Pour off any water and season with vinegar and Charred Lemon Sea Salt.

  4. Plate broccolini and top with torn pieces of fresh mozzarella and toasted almond mixture.
